Simple green fritatta

Based on the Persian dish Kuku Sabzi, this is a go-to recipe for breakfast, lunch or dinner. This nourishing and super simple dish is full of protein, antioxidants and vitamins, and takes all of 15 minutes from prep to plate.

Ingredients:
Bunch of coriander leaves, washed and chopped well
Bunch of parsley leaves, washed and chopped well
Bunch of dill leaves, washed and chopped well
Half a leek, chopped well
6 eggs
Chopped handful of pistachios (I use whatever nuts or seeds I have in the pantry. This morning I used chopped pepitas.. )
2 cloves garlic minced
Teaspoon turmeric
Salt and pepper to taste

Method:
Mix all ingredients together in a large bowl.

Heat a large fry pan on medium before adding a good glug of quality extra virgin olive oil, and let oil come up to temp.

Pour herb mix in. Let sit for 5 mins before flipping it over (flip it over using a tray or plate!). Let sit on heat for another 5 minutes before turning it out onto your plate or chopping board.

Cut to serve, and top with natural yoghurt and seeds or nuts, plus a crack of pepper. So easy and nutritious!

Delicious served alongside a fresh green salad, drizzled with olive oil and a good squeeze of lemon juice.

** Remember to keep the stalks from your herbs for later use. Add these to stocks and soups, stock pastes, curry pastes etc; just store in freezer until you need them :)
